One Pot of Ground Beef and Potatoes:

Ingredients:

  • 3 Cups Diced Russet Potatoes 4-5 Small or 2-3 Medium
  • Two teaspoons of Olive Oil
  • 1 Cup Small Diced Carrots
  • 1 Medium Onion Diced
  • 1 Medium Bell Pepper Diced
  • 1 Pound Ground Beef
  • Salt & Pepper to taste
  • 2 Cloves Garlic Minced
  • 2 tablespoons Worcestershire Sauce
  • 3 Cups Beef Broth
  • 4 Ounces Cream Cheese
  • 2 Cups Shredded Cheese

How to Make Ground Beef and Potatoes?

  • The first step is to cut and peel your potatoes. Yes, I have a photo of the potato for you to refer to. They don’t need to be perfect, but I would like you to be able to see that they should be cut in a small amount so that they cook in 10 minutes. After they’ve been diced, throw them in a bowl, then put them aside.
  • Cut up the remainder of your vegetables. Again take a picture so you’re able to see. It’s a good idea to cut them into small pieces here.
  • Then, add your broth and potatoes! It is best to cook on medium/medium-low during this stage. You should see some light boiling however, don’t overcook or the potatoes will become mushy.
  • After the potatoes have cooked until they are fork-tender, you can take the pot from the stove. Add the cheddar and cream cheese carefully to ensure that you don’t smash your potatoes.
  • One last thing to note, there may be a little liquid left over after you’ve stirred into the cheeses. This is fine, as it will thicken a bit more after it has been sitting for around three to five minutes.

Tips for Beef and Potatoes Success:

  • I love the mix of vegetables here, including onions, carrots bell pepper, carrots, and mushrooms! If you don’t like one of them, then take it out. It is possible to cut out all the vegetables in case you prefer them to be served on the side.
  • I suggest with Russet potatoes to make this recipe. However, Yukon Gold is ok also if you have it available.
  • Do not spend a lot of time making perfect chopping your potatoes! Make sure they’re all around the ballpark size of 1/2 inch and you’re ready to go.
  • If you find that your potatoes stick to the pan when simmering, or you’re depleted of liquid, then you must lower the heat of your stove to a lower level.

If you have leftovers it is possible to transfer any leftover potatoes and ground beef to an airtight container and store it in the refrigerator for a period of 3 to 5 days.

If you prefer to keep the ground beef and potato mixture to preserve the leftovers longer, you can keep it in a sealed airtight container or a freezer bag – for up to six months.
